Fine Dinings

Hawksworth

Our very first post for ‘fine dining’ experience is Hawksworth, which has ranked at 6th place in Canada’s Top 50 Restaurants in 2014 on Vacay.ca.

We went in around 7:00pm on a Saturday night with no reservation but were able to sit at the bar immediately to try their famous Tasting Menu. Their tasting menu (5 main courses + 1 dessert) is $98/$148 with wine flights, and we had one each with/without the wine pairing. Here’s the full menu of the night:

beef tartar | puffed tendon, black truffle, yuzu
wine | tengumai • umajun • junmai • ishikawa • jp

kanpachi ceviche | satsuma, heart of palm, mojo de ajo
wine | 11 fritz hag • riesling • troken • mosel • ger

charred pacific octopus | north arm farm radish, ox heart vinaigrette
wine | 11 jean maupertuis • la pierres noires • auvergne • fra

epazote steamed sablefish | corn, pumpkin seed, sorrel
wine | 12 eric texier • adéle • côtes du rhône • fra

24hr pork belly | summer beans, apricot, caramelized honey cider jus
wine | 09 cien y pico • doble pasta • garnacha • manchuela • sp

goat milk pans cotta | strawberry, elderflower
wine | 13 innocent bystander • moscato • victoria • aus

Food // Among the 5 main courses we had, our favorite was Epazote Steamed Sablefish. It was wrapped and cooked in banana leaves, and the texture of the fish was quite amazing. We actually ordered two appetizers before the dessert came because our stomachs were somehow calling for more food. Cole ended up loving one of them – Seared Japanese Squid – and said that it was the best of everything that we had at the end of the night. The bartender told us that it was also his favorite dish at Hawksworth (he said he could eat 3 plates of them – a squid party!) The sweetness of the dessert they had (goat milk panna cotta) was very toned down compared to most dessert dishes we’ve had at other fine dining restaurants and was something that non-dessert eaters could enjoy as well (Hiroko doesn’t have a sweet tooth either!). The overall service (server and a sommelier) and the pacing were both great. If you ask them, they give you a  hard copy of their current tasting menu with wine flight so that you won’t forget the yummy details the next morning).

Wine // Their wine pairing was also very interesting – every glass of wine had a very strong personality. The best pairing of the night was the Epazote Steamed Sablefish paired with 12 eric texier • adéle • côtes du rhône from France: it was just an amazingly enjoyable pairing of flavors. All of the wines were very unique on this night, especially the white wines (Beef Tartar was served with a glass of Sake, for exapmle, and it was a really fun and tasty pairing.)  After seeing the care they take into making sure each wine is the perfect temperature, we began to understand how serious the wine program is at this restaurant. Something that really stood out was their ability to be able to give information about the wines that lead to a flavor experience. All three of the sommelier were amazing and willing to spend as much or as little time as we wanted to get the best wine/dining experience possible.

The little gem of the night was that they took us to the restaurant tour after we were done eating! We got to see their wine room, the kitchen, and got to greet with Kristian Eligh – their Chef de Cuisine. We love love love restaurants that know how to enchant their guests in addition to their wonderful food!

Earnest Ice Cream

There are some great local ice cream shops in our home Seattle, such as Molly Moon’s and Blue Bird, to fill a sweet dream for ice cream lovers: but apparently Vancouver can do the same.

Earnest Ice cream – seriously good – was a very cute local creamery that make people happy by providing their unique flavored ice creams using an all natural base of local milk, cream, and eggs. Some of their permanent and seasonal flavors include:

  • Rum Raisin
  • Sweet Potato Casserole
  • London Fog
  • Cranberry Walnut
  • Lemon Poppy Seed
  • Cognac
  • Cardamom
  • Whiskey Hazelnut
  • Strawberry Basil
  • Salted Caramel
  • Tahitian Vanilla… and many more (including some Vegan options)!

Cole tried their Oatmeal Brown Sugar on a cone, and it was delicious! It proved that their tag line “-seriously good- was not a joke after all. The balance between the milk base and the flavors of the ingredients was amazing… we wanted to get a sample from ALL flavors that they had. (Yes, they give you samples if you’d like to taste them before you make a big serious ice cream commitment.) Oh, and for those who love good coffee, great news – they serve Matchstick Coffee! They even have affogato on their menu as well. (Cole’s coffee note: I had a coffee made on their La Marzocco GS3, and it was very tasty!)

We also liked the overall design of the shop – it was warm, cozy, and very hand-made. The interior was matching to the personality of the shop well and expressed their simple love and care for those tasty ice creams. Earnest Ice cream, you are a sweet spot!

Yale Town Distilling Co.

Two Pekos in Vancouver, B.C. Canada: Part IV:

“I could talk about this (gin) all day long!” – Craig told us. When we were hanging out in Yale town, we passed by this relatively-new looking distillery and ended up going inside for fun. It was called Yale Town Distilling Company, and they locally make their own unique gin and vodka. Craig is one of the craft spirits lovers working for this company and informed us with his knowledge/ passion about how interesting the world of ‘gin’ could be and also what their approach is to create unique flavors/tastes while we tried shots of their very fragrant gin. It’s always fun to have a little Q&A sessions with professionals when you eat/drink 🙂  Their gin that we got to try was a London Dry style of gin that was very floral, spicy and with a great balance of sweetness and bitterness. Many amazing ingredients go into this gin including Juniper, Coriander, licorice root, and almonds but Craig excitedly told us that their ‘secret’ recipe includes the grains of paradise from west Africa as this is not always used in London Dry.

At the end, we purchased a bottle of their limited edition gin – EAU de VIE as a souvenir to ourselves, which we are pretty excited to try tasting soon. If you’re into craft cocktails & spirits, and happen to be in Vancouver, this may be an interesting place to check out in a short amount of time – Craig or anyone there will be happy to educate you!

Revolver Coffee

Two Pekos in Vancouver, B.C. Canada Part III (written by Cole):

Vancouver offers many great places for coffee – but among all of them Revolver has consistently been the best coffee bar I’ve been into! Every time I come in, it does not matter if I know the people working or not –  I get the same amazing experience from their friendly/professional baristas. I generally order filter coffee (which they brew by the cup).  And although the default method at Revolver is the Able Kone metal filter for the Chemex that I personally do not like (I prefer a paper filter for my coffee), this has never once be a problem as I let the staff know which method I prefer for my coffee. When I let them know that I would like a paper filter, they are eager to please and make me a Clever or a V60 instead. On top of the amazing service, the coffee is always tasty and comes out very quickly considering how busy they always are. The times I’ve ordered espresso it has also been nothing short of fantastic. This place used to be a small coffee bar with a limited seating area, but their recent addition of the “archive” room, which is connected to the main coffee bar, now allows enough seating for everyone coming in. I also very much enjoy the design of the entire place: I find it very well thought-out. If you’re in Vancouver looking for a great cup of coffee,  you should definitely stop by here.

Farmer’s Apprentice

Two Pekos in Vancouver, B.C. Canada Part II:

Farmer’s Apprentice was listed on Canada’s top 50 restaurants in 2014 and was ranked No.4!! It was a cozy artisan style restaurant. Their menu was small, yet their dishes with fresh ingredients made for the perfect brunch on the weekend (menu changes weekly). The wild and cultivated mushroom dish we ordered was very juicy and flavorful, and Cole enjoyed one of their cocktails made with rhubarb syrup, gin, and lemon balm. A few small mistakes to note was – 1) they forgot to take out cucumbers on one of the dishes even though I asked them for “no cucumbers”. 2) their bread come with fresh jam of the day, but they didn’t explain what the ‘jam of the day’ was when they served it to us. When restaurants are crazy busy, they tend to make these kind of mistakes no matter which city visit: you just need to be precise and alert them if you’re allergic to something.

If you’d like to visit here, make sure to get there early to get a table, like any other popular restaurants this place fills up pretty fast as soon as they open the door!

Beaucoup Bakery & Café

Two Pekos in Vancouver, B.C. Canada Part I:

One of the waitresses at Farmer’s Apprentice recommended us Beaucoup Bakery & Café for coffee, which happened to be one of the best treats during our visit in Vancouver ! This lovely French-inspired cafe was such a gem in this neighborhood, and we truly enjoyed spending time there. All the desserts and baked goods looked delicious, and according to Cole their croissant (super crispy outside and fluffy/light inside) was one of the best that he’s ever had. We highly recommend you to try one if you go there! Their filter coffee (49th Parallel) was nicely brewed, and the tea set coming on a silver tray was a super cute presentation that fits to the theme of this café!
